These high protein cookies are a slight variation of a recipe I had in my piles of cookbooks and recipes.  They are an extremely healthy snack if you don’t have any nut allergies and are acceptable for those on a gluten free diet.  The almond flour and cashew nuts are excellent sources of Vitamin E, iron, magnesium, calcium, potassium, as well as other vitamins and minerals.  The cashew nuts also provide an excellent source of monounsaturated omega-9 fatty acid which can lower blood pressure and increase fat burning in people trying to lose weight.  Each cookie is about 203 Calories with 16 grams of protein, 10 grams of carbohydrates, and 11 grams of fat.  See nutritional information below.

Ingredients For 4 Cookies:

2 scoop (2 servings) Quest Vanilla Protein Powder

¼ cup Almond Flour

½ cup Raw Whole Cashews

2 Tsp Lemon Zest

1/4 cup Raw Lemon Juice

2 Tbsp (15g) Unsweetened Fine Shredded Coconut

Directions:

Combine protein powder, almond flour, whole cashews,

and lemon zest in a food processor or Nutri-Bullet blender.

Squeeze out at least a 1/4 cup of fresh lemon juice in a separate glass.

Transfer to a bowl and break up large clumps with a fork.

Then slowly add lemon juice and form a doughy mixture.

If the mixture becomes too moist, add a little more almond flour and if it is too dry, add a little more lemon juice.

Then create 4 equally sized balls and flatten each one out onto some parchment paper to form a cookie shape.  Sprinkle the top of each cookie with shredded coconut and refrigerate for at least an hour.  These cookies should last in the fridge for up to 5 days.  Enjoy!
